The meat with the signs of PSE and DFD defects has essential distinctions from healthy animal meat. Some authors regard PSE- and DFD-defects as a sequence of animal adaptation in the extreme conditions. According to the opinion of different authors, muscular tissue with the signs of dystrophy with any signs of destruction should be regarded as pathologically altered and originated from the animal that has health problems. For the meat with PSE and DFD defects special storage conditions and technological parameters of processing should be elaborated.
