Veterinary-sanitary examination of domestic and wild duck meat at sarcocystosis

The article presents findings of investigation of domestic and wild ducks carcasses to determine the extensity and intensity of affecting them with sarcocystosis as well as learning the basic symptoms of pre-slaughter and post-slaughter diagnosis of disease. The authors determine also marketability, organoleptic, physical, chemical, and microbiological indicators of domestic and wild ducks meat affected by sarcocystosis comparing it with healthy poultry meat. In recent decades, sarcocystosis became widespread in both animals and poultry. It is revealed that sarcocystosis affects many species of farm animals, as well as domestic and wild poultry. The affected animals are characterized by reduced fatness and deteriorated consumer properties of meat, as the water content in the meat becomes higher at a smaller amount of protein, fat and extractive substances. ©2016 International Information Institute.
