У 1-, 14-, 28-, 42-, 105-, 155- и 420-дневных кур породы корниш изучали химический состав мышц.Установлено, что он зависит от возраста птицы и анатомического расположения мышц.С возрастом у кур количество воды в мышцах понижается на 7,51–7,61 %, но повышается содержание белка на 5,65–6,03 %, жира — на 1,59–1,94 %.

It's found, that chemical composition of the muscle depends on the age of the birds, and anatomical location of the muscle. With age, the amount of water in chicken muscle is reducedby 7,51-7,61%, but increases the protein content in 5,65-6,03%, and fat — in 1,59-1,94%.
